Earl Grey Lavender Cookies

Tender shortbread cookies with just that floral fragrance. 




I know. Another recipe with lavender. 

But trust me, you will love this. 



It's a more elegant version of the usual vanilla shortbread cookies, with the floral fragrance of earl grey and lavender. 



If you haven't tried earl grey and lavender together, try it today. Now. Like now. You will not regret it :) 



These cookies start off with creaming butter with icing sugar, then some ground lavender, earl grey tea leaves, and flour is added. Refridgerste the dough for a couple of hours, roll it out and cut. 



So cute and super easy! Try it out with all earl grey, or your favourite tea or flavours. Or leave out the tea completely and replace it with lots of vanilla. Yum. 



Earl Grey Lavender Shortbread Cookies

Ingredients:

  • 1 cup all-purpose flour
  • 1 1/2 tsp loose earl grey tea leaves 
  • 1 1/2 tsp dried lavender 
  • 1/4 teaspoon salt
  • 1 stick unsalted butter, softened
  • 1/4 cup powdered sugar

 Directions:

1. Mix together (with a spoon) flour, tea and salt in a separate bowl and set aside.

2. Mix butter and sugar with an electric mixer until pale and fluffy. In a food processer, grind the dried lavender and tea leaves until it resembles fine crumbs. Slowly mix in flour and lavender earl grey mixture until just combined.

3. Divide the dough into half and transfer each half to a piece of baking paper. Shape them into flat discs and freeze for an hour. 

4. Preheat oven to 175°C. Cut the dough into your desired shape. I used cat cookie cutters.

5. Bake for about 13 to 15 minutes until edges turn golden. Let them cool and your Earl Grey Lavender cookies are ready!
